Yakhneh (يخنة) is originally a Turkish word that means a dish of vegetables and meat in red sauce. In Middle Eastern and Arabic cuisines, there are various “Yakhneh” dishes prepared in different methods with various kinds of vegetables: green beans, peas, potatoes, mulukhiya, zucchini, cauliflower to name a few Middle Eastern Cuisine dishes. Some stews are prepared with meat while others with chicken; all can be prepared vegetarian. Many stews have tomatoes in them as well.
Yakhneh dishes are very easy to prepare and don’t take a lot of your time. If you are using frozen vegetables, then even the cleaning and preparing of the vegetables is taken care of and your meal is ready in a snap. Yakhneh dishes are customarily served with plain rice.
Green Beans Stew or Yakhnet Fasulia is one of my favorites! In addition to its delicious taste, it is very easy to prepare.
Green Beans Stew Recipe:
Preparation time: 10 min Cook time: 1 hour
Ingredients:
800 grams (1.764 lbs) frozen green beans (you can also use fresh when in season)
400 grams (0.9 lbs) lamb meat without bones (best from the leg part)
1 large onion, finely chopped
5 cloves garlic, crushed
1/4 cup oil (canola, corn, sunflower)
5 large tomatoes, grinded or processed in food processor
1½ tablespoon tomato paste
1/2 teaspoon ground black pepper
1 teaspoon allspice
1/4 teaspoon cinnamon
1/8 teaspoon cardamom
1/8 teaspoon nutmeg
1¾ teaspoon salt (you can increase to taste)
How to make Green Beans Stew:
- Chop the lamb meat into bite size pieces. Many prepare this dish with large chops of meat but I found when you cut the meat into bite size pieces the dish turns better.
- Heat the oil then add the meat, onions, and black pepper, allspice, cinnamon, cardamom and nutmeg. mix well and fry them until the meat’s color turns light brown. About 5 minutes.
- Rinse the frozen green beans with water to remove the ice, then add them to the meat and turn over heat for 3-4 minutes.
- Add the grinded tomatoes, crushed garlic, tomato paste and salt. Mix well and simmer over medium heat for about half an hour. Add about 1-2 cups of water depending how saucy you love your stew, simmer for 10 minutes and you are done.
Serve the Green Beans Stew with rice.
